I made some brown rice (I was in a hurry so used instant, but prefer the regular kind), got a rotisserie chicken and shredded up the meat, then just put more toppings in bowls and let everyone build their own. We set out sour cream, cheese, avocado, beans, tomatoes, and salsa.
